Breakfast Enchiladas

INGREDIENTS

EGGS, scrambled - One egg per enchilada

BACON, cooked and chopped - One piece of bacon for every two enchiladas

CHEESE, shredded - As desired on each enchilada
-
TORTILLAS, raw flour - Flip on stove top until fluffy
-
HEAVY CREAM - Two cups
-
SALSA - drained
DIRECTIONS

Preheat oven to 375
-
Mix scrambled eggs, shredded cheese, chopped bacon, and wrap up mixture in cooked tortillas

Place each in casserole dish

Pour 2 cups heavy cream in a small pot on the stove on medium heat. Mix with the one jar of drained salsa and bring to a boil or until thickened

Pour sauce over enchilada dish and place in oven for 30 minutes
Simple Crust-less quiche
INGREDIENTS

EGGS - One egg makes one slice of quiche
-
CHEESE, shredded - I prefer Colby Jack or mozzarella
-
HEAVY CREAM - For every two eggs used, a half cup of cream is required
-
Don't be afraid to throw spinach, sausage, bacon, or anything else tasty in!
DIRECTIONS

Preheat oven to 375.

Beat eggs completely before adding heavy cream.

Beat eggs and heavy cream completely before adding additional ingredients.

Pour quiche mixture into adequately sized pan. The quiche will rise considerably, so make sure ingredients are filling the pan halfway.

Bake until top is golden brown. Depending on how large the dish is, this can take from 25 to 45 minutes.
